Ingredients
- ½ cucumber washed and diced
- 250 g natural yoghurt or plant-based yoghurt
- 20 ml water
- 1 crushed garlic
- Handful fresh mint leaves finely chopped
- Salt to taste
- ½ tsp dry mint to garnish
- Drizzle of olive oil
Method
- Wash the cucumber and dice finely and put into your favourite salad bowl.
- Wash the mint leaves and finely chop them to add over the diced cucumbers.
- Mix the yoghurt with the water and season with salt to taste, pour the yoghurt mix over the diced cucumbers and mint leaves.
- Stir in the crushed garlic, garnish with dry mint and drizzles of olive oil.
