Ingredients
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 1 tsp. curry powder
- 1 tsp. smoked paprika
- ½ tsp. chilli powder
- 1 can red kidney beans, drained and rinsed
- 1 can sweetcorn
- ½ can chopped tomatoes
- Salt and pepper to taste
- 1 tbsp. oil
- Coriander a few sprigs chopped
- 300g rice
Method
- Heat the oil over a medium heat in a large saucepan and add the chopped onion. Fry for 5 minutes before adding the garlic, curry & chilli powder and paprika
- Stir well and then add the beans, sweetcorn, chopped pepper and tomatoes to the saucepan
- Add 1 cup of water
- Season with salt & pepper then cover the pot and allow to cook for about 15mins
- Remove from heat and sprinkle over the chopped coriander.
This meal should cost you no more than £2.50. You can add other vegetables you have lying around in your fridge that need using up!
