By making plant-based dishes sound just as appealing as meat ones, food service can nudge diners towards more sustainable choices when eating out.

Fast-food chain Leon uses creative dish descriptions to make plant-based meals sound appealing and “as tasty as they can be”.

  • Plant-based dishes are bold, full of flavour and use local and seasonal produce.
  • Menu descriptions focus on taste and texture with lots of fresh herbs and spices.
  • “Well-sourced meat” is used in meat dishes

Research from Eating Better member WRI has found messaging on menus that outline the benefits of choosing plant-based dishes can influence behaviour change, nudging diners to opt for more sustainable options.
